Asian Chopped Salad
I love this salad in the summer, well, really, any time of year! It appears you all love chopped salads too, based on the responses to my recent social media poll.
I encourage you to get creative with the ingredients and consider adding/swapping in:
Nuts: sesame seeds, almonds, cashews, macadamia nuts
Protein: cooked ground turkey/ chicken, cubed turkey, shrimp, salmon, tofu, chickpeas
Dressing: skip the peanut butter or swap for Tahini paste.
Add mandarin orange slices or add some orange to the dressing.
Make it a bowl by adding a base of rice or wrap in a rice paper wrapper.
I often make this salad when we travel because it keeps really well in a cooler if not tossed with the dressing. My time saving tip is to buy bags of pre-shredded cabbage, carrots or coleslaw mix.
