Shepherd’s Pie

I’ll be honest, I’m not a ‘casserole-Mom.’ I am not a fan of throwing all the components of the meal into a 9x13 with a can of cream soup and serving it up.

Shepherd’s Pie is NOT a casserole. It’s a hearty, healthy and delicious dinner that can easily be made in advance…no ‘cream of whatever’ soup required.

I do however LOVE to use up leftovers or food we have on hand, even if not specifically per the recipe. The last time I made this dish I did use leftover mashed potatoes for the topping which was a HUGE time saver. I also love to add mushrooms and green beans to the vegetable combo.

Here’s how it turned out!

The paprika and Romano cheese on the top add appeal and the pan underneath saves a ton of oven cleaning!
