Pumpkin Coconut Curry

As the weather turns colder this is the perfect nutritious and comforting meal that can be made to satisfy vegetarians and meat eaters. Get creative with the vegetables. We’ve made it with cubed butternut squash and green beans.

This recipe makes 2 large portions. I’m feeding teens and live off of leftovers so I usually make at least a double batch.
